Cowboy Meatloaf

Ingredients:

  • 1 lb ground beef
  • 1 package pre-made mashed potatoes
  • 1/3 cup breadcrumbs
  • 1/2 large onion, finely chopped
  • 1/4 cup barbecue sauce
  • 1 large egg
  • 2 tablespoons chili powder
  • 1 cup bacon bits
  • 1 cup shredded Mexican cheese blend
  • Salt and pepper to taste

Instructions:

  1. Preheat the Oven:
    • Set your oven to 375°F (190°C).
  2. Prepare the Meatloaf:
    • In a large bowl, mix together the ground beef, chopped onion, breadcrumbs, barbecue sauce, egg, chili powder, salt, and pepper until well combined.
    • Transfer the meat mixture into a greased 9×9-inch baking dish.
  3. Bake the Meatloaf:
    • Bake in the preheated oven for 20 to 25 minutes, or until the meatloaf is fully cooked.
    • Remove from the oven and drain off any excess fat.
  4. Add Mashed Potatoes:
    • Follow the package instructions to prepare the mashed potatoes.
    • Spread the mashed potatoes evenly over the meatloaf in the baking dish.
  5. Add Toppings:
    • Sprinkle the shredded Mexican cheese blend and bacon bits over the mashed potatoes.
  6. Finish in the Oven:
    • Turn off the oven and return the dish to the oven for a few minutes, or until the cheese is melted and bubbly.
  7. Serve and Enjoy:
