Whipped Feta with Honey and Garlic Herb Roasted Olives

Ingredients
  

  • 2 cups mixed pitted olives
  • 1/3 cup extra virgin olive oil
  • 6 garlic cloves lightly smashed
  • 1 shallot peeled and quartered
  • 1 lemon scrubbed and quartered
  • 2 sprigs fresh thyme
  • 2 sprigs fresh oregano
  • Chili flakes to taste
  • 1 cup crumbled feta cheese
  • 3 ounces cream cheese softened
  • 2 to 3 tablespoons honey
  • Freshly ground black pepper

Method
 

  1. First, preheat the oven to 450 F. Place the olives in a small baking dish along with the olive oil, garlic, shallot, lemon, thyme, oregano, and a generous pinch of chili flakes. Toss gently to coat everything in oil. Then transfer the dish to the oven and roast for 20 to 25 minutes, until the garlic turns golden and the oil is bubbling.
  2. Next, prepare the whipped feta. Add the feta, cream cheese, honey, and a few grinds of black pepper to a food processor. Pulse, then blend until the mixture becomes smooth and airy. Taste and adjust the honey or pepper if needed. After that, refrigerate until ready to serve if making ahead.
  3. Finally, spoon the whipped feta into a shallow serving bowl. Top with the warm roasted olives and some of the infused oil. Serve immediately with crusty bread or crisp crackers.

Notes

You can roast the olives a few hours ahead and rewarm them gently before serving. The whipped feta keeps well in the fridge for up to three days in an airtight container.
