Ingredients

  • 8 slices bacon chopped
  • 2 teaspoons maple syrup
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon chipotle chili powder
  • 1/2 teaspoon chili powder
  • 1 tablespoon fresh rosemary finely chopped
  • Salt to taste
  • 1/3 cup honey
  • 10 ounces creamy goat cheese room temperature
  • 4 ounces cream cheese room temperature

Equipment

  • Skillet
  • Food processor
  • Spatula
  • Serving bowl

Method

  1. First, place the chopped bacon in a skillet over medium heat and cook until crisp, stirring occasionally. During the last minutes, drizzle in the maple syrup, then add smoked paprika, chipotle chili powder, chili powder, rosemary, and a small pinch of salt. Stir well and allow the bacon to caramelize slightly. Remove the bacon from the pan and set aside.
  2. Next, lower the heat and add the honey to the same skillet. Warm gently for two to three minutes, stirring often so it stays smooth and pourable.
  3. Meanwhile, add the goat cheese, cream cheese, and a pinch of salt to a food processor. Pulse until the mixture becomes smooth and airy.
  4. After that, spoon the whipped cheese into a serving bowl and spread it evenly.
  5. Finally, top with the warm honey and candied bacon. Serve immediately with crackers, bread, or pretzels.

Notes

The cheese mixture can be prepared up to three days ahead and stored in the refrigerator. Bring it to room temperature before serving for the best texture.
